You can install OpenJDK 17, 21 (recommended for Minecraft 1.20+), as well as Java 8 and 11 for older versions and certain modpacks. It's possible to install multiple Java versions simultaneously and choose which one to use for each server via SSH.

This depends on your VPS configuration and your mods/plugins. In vanilla: 1 GB RAM = ~10 players, 2 GB = ~20 players, 4 GB = ~50 players, 8 GB = ~100-150 players, 16 GB = 200+ players. With heavy mods, divide these numbers by 2-3. CPU performance is as important as RAM.
